YIRGACHEFFE IDIDO
Idido is a famous coffee-growing area found in the Yirgacheffe region of the Gedeo Zone, which is
part of Ethiopia’s Southern Nations, Nationalities, and Peoples’ Region (SNNPR). This stunning area
is situated at an altitude of 1,900 to 2,200 meters above sea level, featuring lush green highlands,
abundant rainfall, and fertile, red-brown loamy soil—ideal for growing high-quality Arabica
coffee. ES Coffee Trading PLC has built a strong and lasting partnership with local coffee farmers
and the Idido washing station. This collaboration is all about enhancing coffee quality, ensuring
transparency, and uplifting the livelihoods of local farmers.
The partnership in the Idido area offers valuable technical support and post-harvest training to
smallholder farmers. To preserve the unique flavor of Yirgacheffe coffee, we implement strategies
like selective cherry picking, proper drying methods, and rigorous quality control measures.
Additionally, we supply essential agricultural products, such as shade tree seedlings and organic
compost, to boost soil fertility and productivity.
PROCESS: CARBONIC MACERATION
After the ripe cherries are handpicked, fermentation process in which freshly harvested coffee cherries are
placed in a sealed tank for 7 days and fermented in an environment rich in carbon dioxide (CO₂) with little
or no oxygen.
