Papua New Guinea has long been relegated to “blender coffee” status for many in the specialty
coffee industry. This is for a variety of reasons including supply chain challenges at origin, the
limited pool of quality-focused producers, and, notably, the lack of exposure to great PNG for many
roasters. All of this created a sort of viscous cycle of where the limited supply of high- quality PNG
created a lack of demand for high quality PNG which, in turn, created a lack of interest for
producers to create high quality PNG coffees.
This Papua New Guinea comes from a Single farm- The Sigri Estate. Our partners at Benchmark
and the Sigri Estate work very hard with local partners to ensure the greatest quality of coffee. They
also do many social projects around the community such as building schools and putting in clean
sources of water. They do excellent work and provide excellent coffee from an extremely unique
origin.
This particular coffee is a naturally processed coffee from the Sigri Estate. Naturally processed
coffee is generally only available for special order before the harvest because of how difficult it is to
process natural coffees in the extremely humid climate of Papua New Guinea.
However, they have worked for years to develop a way to naturally process coffees in the extremely humid environment. This coffee brings out extremely bright and fruit forward flavors which are very rare to find from this origin The Sigri Estate employs a medium density shade strategy, using two types of shade trees.
This promotes even ripening of coffee cherries and provides habitat for at least 90 species of birds The Sigri Estate primarily processes washed Arabica coffee that undergoes a rigorous wet factory
process. Quality Control begins in the field; Cherries are hand-picked and carefully checked for
uniformity; it must be red and fully ripe which allows for the correct balance of sugar and acid
within the cherry. After sun-drying, the coffees are carefully conditioned for 21 days. This is followed
by destoning, hulling, grading, densometric sorting, color sorting, and finally hand sorting.
